Oyster farming is a major industry in Hiroshima Bay in the western part of Japan. The bay is sheltered by a number of promontories and islands of the Inland Sea. The currents and calm waters are ideal for the cultivation of this shellfish. The area is Japan's biggest producer of oysters, which are often referred to as Hiroshima oysters. Despite their size, they produce an ample and flavorsome flesh. January and February are the best season for them.
