The main function of adipose tissue is to store energy in the form of lipids (e.g. triglycerides). In addition, it insulates and cushions the body. Because of large amounts of fat that is stored, the cytoplasm and nucleus are pushed out to the very periphery of the cell--the cytoplasm is very thin and the nucleus is flattened.
