SRINAGAR, JAMMU & KASHMIR, INDIA - 2024/05/28: Traditional Kashmiri chefs smash lamb meat to prepare a dish called Gustaba in Srinagar. Wazwan (Kashmiri: ) is a traditional multi-course meal in Kashmiri cuisine, renowned as an art form and a cultural emblem. Predominantly meat-based, it features lamb and chicken, with a few vegetarian dishes. It is prepared by master chefs called vaste waze, and the meal is typically served during weddings and reunions. Guests share the meal from a large copper platter (traem), they begin with rice and various meat types, including seekh kababs, methi korma, tabak maaz, safed kokur, and zafran kokur. Essential dishes include rista, rogan josh, daniwal korma, aab gosh, marchhwangan korma, and gushtaba, and they conclude with desserts.
